KAKAÓ 
Az Oulaidon kakaót a ChocoFair Elefántcsontpart hálózata általközvetlenül működtetett "fair trade", azaz méltányos kereskedelmi projekt állítja elő, amelynek célja, hogy megvédje az ültetvények biológiai sokféleségét, amely egynél több kakaófajta termesztését és a kőkemény talaj feldolgozásának minőségét fejleszti. Érzékszervi jellemzők - A kakaót 6 napig halmozott- sweatboxok segítségével fermentálják banánlevélen, a szárítás 7-10 napig tart. Az eredmény egy erősen illatos kakaó, mely köszönhető a közelben lévő vadon élő narancs, a mangó, a kávé és kardamom cserjék virágporának.

 

KANDÍROZOTT ÉS ASZALT GYÜMÖLCSÖK
Szicíliai citromokból származó citromhéj, Calabria-i narancsok héja, őszibarack, savanyú Amarena cseresznye Isztriáról és Szerbiából, sárgabarack Costigliole Saluzzo-ból, armogiane sárgabarack ... most ... mert minden évben új gyümölcsöket választanak! A gyümölcsöket kézzel hámozzák és azonnal fagyasztják, hogy ízük és illatos tulajdonságaik természetes módon megmaradjanak.

TEJ ÉS VAJ

Friss, teljes tejet használnak. Nagyon friss, valóban! Minden reggel közvetlenül a helyi tejüzemből hozzák. Ami a vajat illeti, sajnos nem találtak olasz vajat az általuk keresett minőségi jellemzőkkel. Akár tetszik, akár nem, mint sok más olasz cukrász, annak érdekében, hogy megtalálják a kiváló minőségű vajat, kénytelenek voltak az Alpokig menni.

TERMÉSZETES "ANYA"KOVÁSZ
A természetes kovászt savas kovásznak, savanyú kenyérnek vagy anyatésztának is nevezik. Ez a legfontosabb összetevő, az abszolút pótolhatatlan. Naponta háromszor felfrissítik a tésztát, elszigetelt környezetben, csak egy erre specializált dagasztóval dolgozzák át. A természetesen kovászolt termékek és a sörélesztővel előállított termékek között azonnal észrevehető különbségek vannak az egyedülálló konzisztenciában és ízben, amely csak természetes a kovász élesztő adhat. A bonyolultabb munkamódszerek mellett a savanyú kelesztés sokkal tovább tart, ami nehezíti a gyártási ciklusok megtervezését. Csak a tapasztalat és a képesség kezeli az ilyen változó paramétereket, biztos lehetsz abban, hogy kiváló minőségű végterméket kapsz. Még akkor is, ha a természetes kovász használata néha frusztrációt okoz, soha nem fogják feladni!

 

 

 

 

 

 

OLÍVAOLAJ
Az olaj Szicíliából érkezik. A Földközi-tenger közelében 150-250 méteres tengerszint feletti magasságban termesztett keveréket választották, különféle fajtákból (Moorish, Biancolilla, Nocellara, Cerasuola és Tonda Iblea) készített extra szűz olívaolajat. Minőségét számos helyen díjazták,és elismerték a Flos Olei Guide-ban is, amely a legjobb olívaolajok szent könyvének tekinthető. Az a kezdeti, szinte kalandos ötlet, hogy olaj helyettesítse a vajat a hagyományos karácsonyi és húsvéti sütemények elkészítésében, olyan termékeket eredményezett, amelyek tökéletes süteményekké váltak!

TOJÁS
Csak friss tojásokat használnak, amelyeket heti három alkalommal szállítanak nekik. Kiemelendő tény, hogy csak szabadtartású szárnyasok tojásait használják. A választás egyszerű. A tojás méltóságteljes körülmények között élő tyúktól is származhat, vagy egy olyan tyúktól, amelynek nevelése során teljesen megfosztják az állatot saját természetes életétől. A Filippi a méltóságot választja. A szabadtartású tyúkok által termelt tojások etikus választást jelentenek. A Filippi, mint bármely fogyasztó, így konkrét üzeneteket adhatnak a piacnak, amelyek garantálják a kényelmet és az életminőség javítását mindenkinek, embernek és állatnak.

VANÍLIA
Mivel nem használnak mesterséges ízesítőszereket, ez különösen fontos összetevő. Ez az alapvető természetes aroma, amely kerekíti és kitölti asütemények ízét. A Planifolia Bourbon típusú vaníliapor Madagaszkárról érkezik, egész, kezeletlen hüvelyek őrléséből származik, tanúsított ökológiai gazdálkodásból. Az egyedileg választott finomító kezelésnek köszönhetően a többi piacon lévő babhoz képest magasabb vanillintartalommal rendelkezik. Ezért minden alkalommal, amikor megkóstolod termékeiket, érzékeidet bizsergeti a vanília meleg és érzéki aromája.

"JEGESÍTÉS"
Ami a "jegesítést", azaz a fehér díszítést illeti, az egyes összetevőket egyenként választják ki, nem fordulnak az egyszerű, készen kapható keverékek használatához. Tojásfehérje, nádcukor, olívaolaj, mandula liszt, keserű mandula liszt, rizsliszt, egész "First Bari" mandula. A jegesítés az utolsó fázis, mielőtt a sütemény a sütőbe kerülne, de nem szükségtelen. A jegesítés mind a sütemények végső kinézetét, mind a kezdeti ízvilágot befolyásolja. Strukturált, vastag, nagyon ropogós a végeredmény.

Mother Maria and father Giuliano have written the first chapter of this beautiful story, with genuine ingredients and family values. NATURAL LEAVEN

It is the most important ingredient, the absolutely irreplaceable “something”, the equivalent of a signature at the bottom of a work of art.

Our mother dough is the unique imprint that makes our products authentic. In the past mother dough was something to guard so jealously for its unique features, that it was given to daughters when they were about to get married. In villages it was preserved by bakers who, with proper refreshing, kept it alive and redistributed it weekly to families preparing bread at home.

A natural leavening makes products healthier and more digestible. Our mother dough has been kept alive for more than forty years and preserved with care and attention, the way one would care for a living thing, which sour dough actually is. The immediately noticeable differences between products leavened naturally and products raised with brewer’s yeast is in the unique consistency and taste that only a natural leaven yeast can give.

MILK AND BUTTER

We use fresh, whole milk that is delivered to us every morning directly from the dairy in our village. The dairy is a cooperative that over time has been able to unite about twenty small local, certified organic producers of raw mountain, hill and lowland milk.

Being supplied “close to home” is synonymous with absolute freshness and it is also a way to actively contribute to the growth of local economies.

The Italian butter is quintessentially a surfacing butter, which means a very long process done at very high temperatures, with consequent alteration of organoleptic properties. Therefore, like many other Italian confectioners, in order to find a high-quality centrifuged butter, we have been forced to go beyond the Alps, to northern parts of Europe.

HONEY

We have decided to use this optimal natural sweetener, dosing it in combination with a lower amount of sugar.

What can be sweeter and more natural than honey? It has a greater sweetening power than sugar and therefore allows us to save calories while being an nutritionally valuable element. Our honey (mostly acacia, chestnut, heather and lavender), comes from a specialized company, located not far from us in the province of Padova, whose bees are treated ecologically and fly on the hillsides of the Po Valley, in the Regional Park of the Euganean Hills.

It is a local product, born from love and respect of nature and from regional protection. Honey from the Euganean Hills is.

EGGS

We only use fresh eggs produced by free range hens. We choose dignity to deliver concrete messages to the market to orient itself towards productive systems that improve comfort and everyone’s quality of life (people and animals).

CANDIED FRUIT AND RAISINS

Lemon peel from Sicilian lemons, the peel of Washington oranges from Calabria, peaches, sour Amarena cherries, round apricots: every year we pick and choose new fruits for our fruity creations! The candying process takes place naturally, without mechanical pressures, simply under atmospheric pressure. Candying is a very long process, which takes weeks, but it keeps the peels very soft and allows the fruits to maintain a strong flavour.

The raisins come from a properly dried grape variety of Greek, Turkish or Iranian origin. Australian raisins are presently one of the best on the market for confectionery use. The raisin has an amber colour and is made from grapes with a very thin peel. This increases its melting point and its ability to stay intact in the dough. Every year we select our raisins just before production starts.

CRIOLLO COCOA AND TRINITARIO

The Criollo variety represents a very small percentage of total cocoa production from all over the world and for this reason it is much sought after by the pastry chefs and the most demanding palates. Pasticceria Filippi has chosen to cooperate with growers from Chachi Cayapas, a region north of Esmeraldas in Ecuador. In these regions Criollo has an exceptional white color, which stands out for its delicate flavour. Its primary hints of flowers and dried fruits give the chocolate ruby nuances with a persistent taste.

VANILLA

Since we don’t use any artificial flavouring, it is a particularly important ingredient for us: it is the fundamental natural flavour that rounds off and completes the taste of our products. This is the final touch that only a flower can give! Vanilla is in fact an orchid, whose origin has far-off roots: Aztecs used it well before the discovery of the New World. Our vanilla powder, of Planifolia Bourbon type, arrives from organic and certified fair trade cultivations in Madagascar and it is obtained from grinding whole untreated pods. As we know, vanilla flavour is made up of 150 different natural aromatic molecules, among which the main one is vanillin. The vanilla we have chosen, thanks to its particular refining treatment, has a higher vanillin content compared to others beans on the market. That is why every time you taste our products, your senses are pleasantly stimulated by the warm and sensual notes of vanilla.

EXTRA VIRGIN OLIVE OIL

In order to find our liquid gold, the symbol of Mediterranean countries, we have gone right to the heart of the Iblei Mountains, in South-Eastern Sicily, where the olive, the most ancient tree planted on the Earth, thrives in its natural habitat. We have chosen a blend, an extra virgin oil pressed from different olive varieties (Moorish, Biancolilla, Nocellara, Cerasuola and Tonda Iblea) cultivated near the Mediterranean Sea, at 150-250 meters above sea level. The olives are picked by hand and milled on the day of the harvest by cold centrifugation to ensure this oil’s high quality.
